Smoked salmon, mango & toasted pine nut salad with a maple and lime dressing

SMOKED SALMON, MANGO & TOASTED PINE NUT SALAD WITH A MAPLE AND LIME DRESSING If this doesn’t scream summer then I don’t know what does! ☀️ It’s delicate in flavour and as pretty as a picture...a real taste bud tantaliser😋 To make • On a plate add a handful of salad leaves. I used a ready bag of watercress, spinach and rocket because it’s bursting with flavour and nutritional benefits • Add some chunks of ripened mango • Chop some courgette finely and add to salad (yes it does taste good raw and adds a real crunch to a salad)…

Fish, chips & fresh minty peas

FISH, CHIPS & FRESH MINTY PEAS🐟 Now I do like a fish and chip dinner, but only rarely do I visit the chip shop. That’s because I love to make my own. Its better quality, made with your own fair hands and hugely versatile..... I get no complaints from the family either👍 To make this one • Place a haddock fillet on a piece of foil (1 fillet per piece) rub in 1/2 tsp of rock salt then sprinkle some grated lemon zest and dried basil on to the flesh of the fish • Add some fresh chopped parsley, a…

Count your blessings

COUNT YOUR BLESSINGS I’m not preaching with this post at all as I can be guilty of focusing on the more stressful aspects of my life rather than the positives sometimes too Our lives are busy and they are probably only going to get busier. It’s how we manage them that matters There will be all sorts of things that we will stress over that really don’t warrant the time and effort that we give them. We are more…

PERFECT SUMMER SALAD☀️ ASPARAGUS, STRAWBERRY & TOASTED ALMONDS WITH A ZESTY LIME DRESSING🍓 Today I was going to pick up some lunch bits and visit my mum for a good old catch up in the garden on this beautiful day But then I thought why bother buying food. Finding your inner strength

FINDING YOUR INNER STRENGTH Ive been reflecting on my most recent bike ride that took me through Italy and in to Switzerland It wasn’t my longest ride by any standards, or by anyone else’s standards, but it was the toughest ride I have ever done I’m good at climbing hills and boy did we climb- but it was the mix of the cold, the wet and the massively steep descents that seemed to go on forever that really took it out of me I struggle to grip with my hands when they get cold, and it took every ounce of…
